The test kitchen is supported by a 12,000 SF research & development lab. It’s here where chefs and product development teams experiment with new flavors and techniques. Top-of-theline features include a meat locker, four smokers, and a temperature-controlled spice room.
The primary challenge in designing the space was determining how to securely vent the lab through 4 1/2 finished and occupied floors.
